Is there a way other than go through manually resetting complete status of do a whole course again?

You can go back and manually remove all the check marks. I am not sure if you can reset it all at once. I will check with the staff team. 
Edit: You have to do it manually for now, I will pass this thread to our developers. Maybe we could add this feature in the future.
