Hello i am new into this, i know that it may seems a silly question 
but i do not understand why every projects under ethereum (erc20 tokens), they create their own new tokens and why they do not all use just Ether, i am in the Defi sections.

Hello sir, here are some few lectures to get a better understanding on ERC20 Tokens or Standards, why you should use them and how.
Also, I advice to check the Ethereum 101 so you can understand the fundamentals on Ethereum and then DeFi.
